Yeast Breads
Yeast breads (like the name suggests) get their rising power from yeast, as opposed to quick breads, which get their rising power from baking soda or baking powder. This process is slower and more time-intensive, requiring multiple periods of kneading and rising, but lends itself to all sorts of bread recipes. What we traditionally think of as bread is a yeast bread - it's often lightly sweet or not sweet at all, with a distinct crust and well-developed crumb.
