PUMPKIN OAT FLOUR MUFFINS

Combine oat flour, baking powder, pumpkin pie spice, salt, and ground cinnamon in a large bowl. You can use homemade or store-bought oat flour here!

Whisk eggs in a separate bowl, and then mix in maple syrup, melted coconut oil, pumpkin purée, and vanilla extract.

Fold the wet ingredients into the flour mixture, and then fold in the chocolate chips. Don't overmix the batter!

Transfer the batter to a muffin pan coated with nonstick spray, filling each muffin cup to the brim. Sprinkle extra chocolate chips on top.

Bake muffins at 375F for 20 minutes. Cool in the muffin pan for about 10 minutes, and then move to a wire rack to cool completely.
