OAT FLOUR BANANA MUFFINS

Oat flour and rolled oats add extra fiber and protein to these healthy banana muffins, for a breakfast treat you can feel GOOD about eating!

INGREDIENTS

– oat flour – old-fashioned rolled oats – baking powder – salt – honey – coconut oil – eggs

In a large bowl, whisk together the dry ingredients: oat flour, oats, baking powder, and salt.

In a separate bowl, whisk together honey and melted coconut oil. Whisk in the eggs and add to the dry ingredients.

Whisk together the remaining liquid ingredients: mashed bananas, oat milk, and vanilla extract. Add to the dry ingredients.

Use a rubber spatula to fold everything together until evenly combined. The batter won't be very thick.

Grease a 12-cup muffin pan with nonstick spray. Divide the batter evenly between the prepared muffin cups.

Bake muffins at 375F for 17-23 minutes, until a toothpick inserted into the center of one comes out clean.
