IRISH COFFEE CAKE

This buttery Irish Coffee Cake features two layers of brown sugar streusel and flavors of Irish cream liqueur in every bite. It’s perfect to pair with a cup of coffee for a sweet breakfast treat!

INGREDIENTS

– all-purpose flour – brown sugar – espresso powder – vanilla powder – ground cinnamon – salt – salted butter

Combine streusel ingredients in a medium bowl. Add melted butter and Irish cream liqueur, mixing in until the mixture is crumbly.

Preheat your oven to 350F and butter a 9" round springform pan. Dust the bottom and sides with flour to prevent sticking.

In a second bowl, whisk together flour, baking powder, espresso powder, and salt.

In a third bowl, beat together softened butter, granulated sugar, and brown sugar. Then, beat in 2 eggs.

Add vanilla and almond extract to the sugar mixture. Then, alternate adding the flour mixture and buttermilk to finish making the cake batter.

Transfer half of the batter to the springform pan. Layer half of the streusel on top, followed by the remaining batter and streusel.

Bake this Irish coffee cake for 45-55 minutes, until a toothpick inserted into the center comes out clean.
