CANDIED LEMON PEEL

Turn lemon rinds into a sweet, zesty snack with this easy candied lemon peel recipe! All you need is a few simple ingredients.

INGREDIENTS

– fresh organic lemons – granulated sugar – water

Rinse the lemons and slice off the ends. Score the skin into quarters with a sharp knife.

Remove the lemon rinds and slice them into strips about 1/4" thick.

Place in a saucepan and cover with water. Bring to a boil on the stovetop. Once boiling, strain water from peels. Repeat twice more.

Set lemon peel aside. Add water and granulated sugar to saucepan and bring to a simmer. Simmer until temperature reaches approx. 230°F.

Add lemon peel and cook at a simmer until soft and translucent. To avoid crystallization, don't stir the mixture during this process.

Strain peel from syrup and allow to cool briefly before tossing in granulated sugar. Dry on a wire rack before storing.
