CINNAMON CHIP MUFFINS

These soft and tender, cinnamon-filled muffins make a sweet breakfast treat that kids and adults will both love. Ready in under 30 minutes!

INGREDIENTS

– all-purpose flour – almond flour – baking powder – cinnamon – salt – baking soda – granulated sugar

Preheat your oven to 375F and line a 12-cup muffin tin with paper liners.

Whisk the flour, almond flour, baking powder, cinnamon, salt, and baking soda together in a medium size mixing bowl.

In an electric mixer, beat together sugar and coconut oil until the mixture is light and fluffy. Then, beat in eggs.

With the mixer on low, alternate adding the dry ingredients and remaining liquid ingredients. Fold in the cinnamon chips.

Transfer the batter to the prepared baking pan, filling each muffin cup evenly. Sprinkle chopped cinnamon chips on top.

Bake muffins in the preheated oven for 17-20 minutes, until a toothpick inserted into the center of one comes out clean.
