WITH COFFEE GLAZE

ESPRESSO SCONES

These simple scones are flavored with a combination of espresso powder and instant coffee granules, perfect for those who truly LOVE coffee. They only take a few minutes to whip up!

To make them, start by whisking together flour, brown sugar, espresso powder, baking powder, and salt in a large bowl.

Next, use a pastry blender to cut in cold, unsalted butter, until the pieces are pea-sized or smaller and mixed into the flour.

In a separate bowl, mix together heavy cream, instant coffee granules, and vanilla extract, stirring until the granules dissolve.

Fold this into the flour mixture until it's partially incorporated. The mixture may still seem a bit dry at this point.

Use your hands to bring everything together into a cohesive dough, adding more cream as needed. Flatten the dough into a disc, 7/8" thick, and freeze for 1 hour.

Preheat your oven to 400ºF. Meanwhile, slice the chilled dough into 8 equal triangles, and spread them apart on a parchment-lined baking sheet.

Bake for about 18 minutes, or until a toothpick inserted into the center of one of the scones comes out clean. Let them cool on a wire rack before glazing.

Whisk together instant coffee granules, water, powdered sugar, and cream to make the coffee glaze. Spoon the glaze over the cooled scones and sprinkle them with coarse sugar.
