EASY STRAWBERRY

This easy crumb bar recipe combines a fresh strawberry filling with a brown sugar-sweetened oatmeal crumble. These can be made both gluten and dairy free!

The filling is made from a mixture of strawberries and granulated sugar. Simmer them together, add a slurry, and boil the mixture for about a minute, until it's thick.

For the batter, whisk together flour, oats, baking soda, and salt. You can use whole wheat flour or gluten-free flour for this recipe.

In a second bowl, whisk together melted coconut oil, brown sugar, an egg, and vanilla extract until the mixture is smooth.

Fold the wet ingredients into the flour mixture. Set aside 3/4 cup, and press the remaining batter into the bottom of a parchment-lined baking pan.

Add more flour, oats, and brown sugar to the reserved batter, rubbing them in with your fingertips to make the crumb topping.

Spread the strawberry filling over the crust in the pan, and then scatter the crumble mixture on top.

Bake the bars at 375ºF for 30-35 minutes, until the filling is bubbling and the crumble is turning golden. Let them cool completely before slicing and serving!
