2 1/2 cups old-fashioned oats
1/2 cup dried pearl barley, ground to a fine consistency
1/2 cup wheat bran
1/2 cup wheat germ
1/2 cup slivered almonds
1/2 cup walnuts, crushed
1/4 cup ground flaxseed
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped prunes
1/2 cup chopped figs (about 4)
1/4 cup chopped apple (about 1 small)
1/2 cup blended orange juice (about 1 orange, blended with zest of half)
2 cups ripe banana, blended (about 4 bananas)
1 teaspoon almond extract
In a large bowl, mix together the dry ingredients. Add the prunes, figs, and apple and stir.
Combine the blended orange plus zest, bananas, and almond extract and whip together. Pour into the dry mixture, and mix until thoroughly incorporated.
Line a 9 x 13 inch glass baking dish with parchment paper, leaving enough on the sides so that you can use the paper to lift the bars out when they’re done baking. Pour the mixture into the dish, spreading to all corners, and use the back of a spatula to press it down firmly. Bake in the preheated oven for 30 minutes, making sure that a toothpick inserted into the center comes out clean. Let cool before slicing and removing from baking dish.
