I hereby interrupt the talk of chocolate-covered strawberries and cake to bring you Raspberry Truffle Brownies. Sorry? It is, after all, almost Valentine’s Day, and I still have a couple recipes I’m trying to cram in to share with you guys before then. These aren’t just any recipes, they’re recipes with chocolate, chocolate, and more chocolate. I’m so excited!

These brownies take chocolate to the max – we’ve got a whopping three layers of it here. First comes the base – the brownie – and it’s ultra rich and dense. Then we have the raspberry truffle layer. It’s rich too, but with a smooth, light, whipped texture. The combination of chocolate and cream cheese in this layer is straight-up decadent, and fresh raspberry juice adds a subtle fruity note to the flavor. And even though all of this would be plenty of chocolate indulgence without adding any more, the whole thing is topped with a drizzle of dark chocolate ganache. I don’t know about you, but ganache is always welcome in my book, and here it not only adds to the taste of these brownies, but it makes them look that much more elegant.
Now you see why I had to share these before Valentine’s Day, right? They’re so incredibly luxurious, it would practically be sinful if I didn’t. oh my goodness. . . I love these!!! I really should not be on Food Gawker this late in the evening. . :P Definitely adding this to my must bake list! Love how you took brownies up a level with the Raspberry Truffle Layer + ganache. oh my, love this!

Hah I go on Food Gawker at all the wrong times of the day, and it always makes me crave… everything. I hope you give these a try soon! They’re pretty darn good and definitely different than your average brownie. Ganache = love, I’m with you on that :)
